FRYING DUMPLINGS
½ cup breadfruit flour
¾ cup cassava flour
¼ cup cornmeal
½ tsp. baking powder
¼ tsp. Soda
¼ tsp. Salt 1 tsp. sugar
1/8 tsp. nutmeg
¼ tsp. vanilla 1 cup hot coconut milk
Mix all ingredients in a bowl and cover with cling wrap. Let rest for 30 minutes or longer. Shape the dumplings round and about ½ inch thick. In a skillet or frying pan, add ¼ to ½ cup of oil for frying heat on medium flame. Fry in hot oil for 3 to 4 minutes on both sides until brown. Place on a paper towel to drain. (Preheat oil on medium flame)
BOILING DUMPLINGS ½ cup cassava flour ½ cup banana flour ½ cup cornmeal ¼ cup breadfruit flour ½ tsp. salt ½ cup to ¾ cup hot water
Combine flours and add hot water, mix properly and allow resting for 30 minutes before shaping. In a saucepan, bring 5 cups of water to a rolling boil add salt to taste. Add the dumplings and cook for approximately 10 to 15 minutes.
