1 Cup breadfruit shredded (packed)
¼ tsp. nutmeg
One large, very ripe banana (mashed) 2 tsp. vanilla
1 oz. Cream cheese, 2 tbsp. Brown sugar 1 tbsp. rosewater
One tbs. Coconut oil 2 tsp. orange rind
½ Cup walnuts chopped (use your choice of nuts)
¼ cup dry fruits chopped
Two egg whites beaten
Three tbs. Oil and 1oz. butter for frying
Non-stick frying pan or skillet, preferably
In a bowl, mash the banana and add the cream cheese with a fork.
Add the sugar, spices, flavorings, and orange rind, coconut oil.
Mix well to combine the ingredients, add the breadfruit and combine.
Add the fruit and nuts. Set aside.
In a bowl with the two egg whites, whip until it’s foamy.
Add to the banana mixture and gently fold in.
On medium flame, heat the skillet a couple of seconds, and then add the oil.
And the butter, allow to heat until just sizzling.
Add one tablespoon full about 1 inch apart.
Cook for 4 to 5 minutes on both sides or until brown.
When you turn the fritters, add a little oil and butter to complete the cooking.
Dust with icing sugar. Or enjoy as is.
Note: The breadfruit should be baked or roasted, cooled, peeled, and chilled
Overnight. Shred in a food processor with the shredding attachment.
Or simply use your box grater.
